‘Everything Bagel’ Granola

THIS GRANOLA. What can I say that’ll convey the deliciousness that are these heavenly little bits of savory goodness? Honestly I don’t think I can do this stuff justice, but what I can say for sure is that Trader Joe’s ‘Everything But The Bagel’ spice just became my new favorite thing. It’s dangerously good, and when I heard of it recently (I’m a little late to the game on this one, I think…) I knew I wanted to incorporate it into a recipe somehow. I wasn’t sure what I wanted to do with it, I just knew I wanted to highlight all my favorite things about the experience of eating an everything bagel (yes, it’s an experience, and if you disagree with me on that, then you just haven’t been gettin’ your bagels at the right places) Then it hit me: why not make a savory granola with this stuff? For my money, the appeal of an everything bagel isn’t just about the seasoning, it’s about the crunchy crust on top of the bagel, the chewiness of the inside and the texture of the seeds, etc. on top that make it so darn irresistible. Granola is the perfect showcase for all of those things: crunchy toasted seeds, creamy nuts, slightly chewy oats, amazing texture…it seemed natural, so I gave it a go.

The verdict? This stuff is HIGHLY ADDICTIVE. I served mine fresh out of the oven over a greens salad with some dried cranberries and a drizzle (ok, more than a drizzle) of homemade healthy-ish ranch dressing. I absolutely loved it as a garnish, and I have a feeling this would be great with some plain yogurt and a bit of honey as an alternative to traditional sweet granola, but I think my fave way to eat this stuff will be straight outta the palm of my hand. Here’s how I made it.

Ingredients:

1 cup old-fashioned rolled oats
1/2 c raw almonds, raw cashews, raw sunflower seeds
1/4 c sesame seeds and raw pumpkin seeds
1 egg white
3 tsp Trader Joes Everything But The Bagel Spice {as far as I know, no one else makes it}
1 tbsp plus 1/2 tsp honey
1/4 cup olive oil

Directions:

Preheat an oven to 350 degrees and line a baking sheet with parchment paper.

Combine all ingredients in a bowl and stir to combine. Spread the granola on a baking sheet and bake for 25 minutes, stirring at the 10 and 20 minute marks.

Remove from oven and stir. The longer it sits, the crunchier it gets!
